Documents & sign-off

Keep person-in-charge responsibilities and any required food-protection-manager or food-handler credentials separate from internal document sign-off.

United States: before you start

Set up records for the authority that regulates your US establishment. The FDA Food Code is a model used by state and local jurisdictions, with different editions and amendments in force. Choose the site's state, review the local requirements, and connect person-in-charge reviews to the actual food processes.

  1. Keep person-in-charge responsibilities and any required food-protection-manager or food-handler credentials separate from internal document sign-off.
  2. Assign procedures for the actual station and food process, including employee-health reporting and allergen communication where relevant. Use practical instruction as well as acknowledgement.
  3. Review the local requirements when opening another site or changing activities. A certificate or procedure used in one jurisdiction may not answer the next authority's requirements.

Share and track

  1. Upload a document (an SOP, a policy, training material) on the web.
  2. The team sees it on their phones and acknowledges it after reading.
  3. Managers see the completion list — who has signed off and who hasn't.

New versions restart the sign-off, so nobody is acknowledged against an old copy. Acknowledgement is an internal record of sign-off, not a legal signature.
