Allergen information for Australian kitchens

Pro kitchen labels support Australian product allergen options. The separate menu matrix currently uses UK categories, so it does not provide the complete Australian declaration set. Keep customer information checked against ingredients, supplier specifications and FSANZ requirements.

What it does

Australian product options

For Pro kitchen labels, record individual cereals and tree nuts, including pine nut, alongside the other Australian allergen options.

Understand the menu matrix

The existing matrix groups cereals and tree nuts under UK categories. Use it only as a reference; it cannot replace declarations using Australia's required names.

Keep the source information

Keep supplier specifications and current recipe information available to staff. Review changes before updating customer-facing information.

How it works

1. Check ingredients

Review recipes and supplier labels, including substitutions and processing aids.

2. Review cross-contact

Assess preparation and storage practices. A may-contain statement is not a substitute for controls.

3. Check customer declarations

Use the required Australian names and provide declarations with the food or on request where food is not required to bear a label.

Know what each feature covers

Kitchen labels are internal operational labels. Australian customer allergen declarations and packaged retail labels require a separate review; the UK-category matrix should not be presented as a complete Australian allergen chart.
