Understand the menu matrix
The existing matrix groups cereals and tree nuts under UK categories. Use it only as a reference; it cannot replace declarations using Australia's required names.
Keep the source information
Keep supplier specifications and current recipe information available to staff. Review changes before updating customer-facing information.

Review recipes and supplier labels, including substitutions and processing aids.
2. Review cross-contact
Assess preparation and storage practices. A may-contain statement is not a substitute for controls.
