Food-safety procedures in Ireland

Start with the Safe Catering sections that match your operation, then document your own suppliers, preparation steps, responsible people and monitoring arrangements. Turn your setup answers into editable procedure drafts, publish the version you approve, and know exactly who signed it — a ProCafe Pro feature for cafes, delis and bakeries. Starter wording currently follows the FSA's Safe Food, Better Business (SFBB) pack for England and Wales and must be reviewed for your site's jurisdiction.

ProCafe Pro: €45/month + €24 per extra location, including all Core features. The free trial includes Pro features where Pro is available; a paid Pro plan is required afterwards.

Putting this into practice in Ireland

Build the working day around your Irish food-safety system. FSAI's Safe Catering pack separates delivery, refrigeration, cooking and cooling, hot display, hygiene and staff records. Choose the activities your cafe actually carries out, then keep the observations and decisions together for your environmental health officer.

FSAI: Safe Catering pack
  1. Link the written method to the relevant delivery, temperature or hygiene routine. Keep changes to your menu or process visible in the next procedure review.
  2. Prepare an inspection export for the requested site and dates, with the supporting procedures and action records. Electronic records support the system; they do not certify a HACCP plan.

What it does

Drafts from your profile
Generate draft procedures matched to your site's profile and risks. Starter wording follows the FSA's SFBB pack for England and Wales — you review, edit and approve it for your premises and your jurisdiction.
Publish immutable versions
When a procedure is right, publish it. Published versions never change silently — an edit becomes the next version, and the record of what was in force stays intact.
Owner-reviewed task suggestions
A published procedure can suggest scheduled tasks. Nothing is created automatically: you review the suggestions and pick which to create, duplicates are skipped, and some procedures suggest none.
Staff sign-off, on the record
Assign a published procedure and capture each person's sign-off against that exact version — an internal record of who read what, and when.
Procedures for your location
Pro includes source-linked procedure starters for supported markets, with separate Scottish and Northern Irish methods. Review the activities and local requirements for each site before publishing a version and requesting staff acknowledgement.

How it works

  1. Generate and edit

Create drafts from your setup answers, then edit them until they describe how your kitchen actually works.

  2. Publish and assign

Publish the approved version, assign it to your team, and create the suggested tasks you choose to keep.

  3. Export the pack

Download branded procedure and inspection-pack PDFs when someone needs to see them.

Procedures you can stand behind

Every published version is immutable and every sign-off names the exact version signed. ProCafe organises the procedures you approve — it never certifies them.

  • Immutable published versions
  • Sign-off against the exact version
