The rules behind the colours
Keep raw and ready-to-eat preparation separate, and clean & disinfect properly — a commercial dishwasher's heat cycle is the benchmark for shared equipment. Replace deeply scored boards.
The colour mapping is a common convention, not a legal requirement — separation and cleaning/disinfection are the legal controls (FSA cross-contamination guidance).
