The menu allergen matrix currently uses UK categories, including grouped cereals and tree nuts. Its published chart is not a complete Australian allergen declaration tool. Do not use that chart as the sole source of customer allergen information in Australia.

Pro kitchen labels have separate Australian product allergen options, including individual cereals and tree nuts. These labels are for internal kitchen use and do not replace Australian retail labelling or customer declaration requirements.

Keep customer information accurate

  1. Check each recipe against current supplier ingredients and allergen information, including substitutions.
  2. Use Australia's required allergen names in customer declarations and review cross-contact risks separately.
  3. Make the current information available to staff. For food not required to bear a label, provide declarations with the food or on request.
